I have recently started using Remo fiberskyn heads. I have them on batter side of all my toms, and kick, and on the resonate side of kick. The resonate side of toms I use coated diplomat. For the snare I use Aquarian coated, works GREAT for brushes and the rough coat lasts a LONG time.

I like the Evan's Genera Resonant. It's nice and thumpy, but still has a nice tone.

Depending on my mood or the purpose for my kit I try 2 different approaches:
1/ For my prog band recording situations i use Remo Emperor on Resonant side and Remo Ambassador on batter with controlled sound typically on snare.
2/ For live gigs I like to use the above combo for smaller rooms and I actually go for Evans G1 G2 combo in larger rooms. Why? I guess it's just a personal pref and we have the freedom to chop and change these days although it can get a little pricey.
My current set is a DW all Maple kit and I am an "anti taper", I believe that you can achieve the right sound with a little patience and a good ear after all the drums have a personality and you should play to that.
