shields are better for church-type situations, where there is fairly loud music, you're still in an open room and it would over power the rest of the instruments, and there are times where you are playing really loud but everyone else is not necessarily doing the same.

It is all dependent on what you are going for... A soft acoustic feel would obviously consider having a drum "shield".
If you want a live open sound, of course go for the snare, bass drum/(s) and overhead microphones, but be ready to find complications with the melding of sounds with the different microphones--- I would hope you have some drum-mics.
If you are recording, I suggest using live open mics as you state in the latter, however to enhance sound quality while recording I do suggest getting a "shield", as to have an easier time recording without constant microphone and sound tuning.
Playing a live show, ex the "shield" and just go for it.
